Potato Salad with Kernöl and a Giveaway from Vaute Couture!


Kernöl, or pumpkin seed oil, is a specialty of Steiermerk (Styria). It isn't well-known outside of Austria, and that is a shame. It's expensive to find in the US, but finding good Austrian kernöl is worth it, because it's so unique and delicious. Here I've made a roasted fingerling potato salad with shallots, and dressed it with a red wine vinegar and kernöl dressing. Totally simple, totally delicious.

  1. We eat so much salad b/c we LOVE it! My favorite salad is made with red leaf lettuce, sunflower seeds, tomatoes, hot peppers, radishes, and gluten free goddess dressing.

  2. First of all, that potato salad looks amazing. Perfect winter food. Also, my dad and I break into a conga line chanting "you don't make friends with salad" at any mention of the dish, so I really, really need that shirt.

  3. I love a big green salad with quinoa, roast cubed beets, avocado, radishes, and carrots and some hippie stuff like dulse flakes. Or the german potato salad my mom used to make, which I don't think is vegan but I've made/had vegan versions that were good. Unfortunately, I'm strictly a size L guy, but I'm still glad to leave a comment.

  4. Pumpkin seed oil is my favorite salad dressing - I think it doesn't even need vinegar at all. :) Your potato salad looks really good!

  5. Your potato salad looks delicious! And I love the t-shirt! I love all sorts of nuts and seeds in my salad--walnuts, almonds, sunflower seeds, etc. Everything else is just extra ;)

  6. Oo ooo, I love that shirt! And I love salad! It's a good thing too, because I'm super-overloaded with it during the summer from all the lettuce and veggies in my CSA. I like to saute some tofu or tempeh to add to the top of my salads, and it's really yummy mixed with a homemade vegan ranch dressing.

    By the way, your potatoes look so delicious. I've never had pumpkin seed oil... or even heard of it!
