Why hello there, artichoke! Plus a Coconut Bliss giveaway!


I love steamed artichokes with vinaigrette or with lemon and melted Earth Balance so much that I never in my life deviated from eating them this way until a few nights ago. I had always vaguely thought they would be super messy, and that all the stuffing would fall out when I pulled the leaves off. For some reason, I decided to try them anyway, and I'm glad I did.

Stuffed Artichokes


2 large globe artichokes, trimmed
¼ c walnut pieces
2 cloves garlic
1 c sourdough bread crumbs
¼ c nicoise olives
2 T nutritional yeast
¼ c grape tomatoes
Zest of one lemon
½ t salt
Olive oil

Steam artichokes until tender, about 40 minutes. Cool, pull out central leaves and scrape out choke. Set aside.

Preheat oven to 400 degrees F. Place walnuts and garlic in bowl of food processor. Pulse till finely minced. Add crumbs, olives, nooch, tomatoes, zest, and salt. Pulse to mix. Using a spoon, fill center of artichokes lightly . Stuff remaining filling between leaves--and a little goes a long way.Try to get a little stuffing by the base of each leaf. Drizzle liberally with olive oil. Bake till browned, about 25 minutes.

  1. We were having a discussion about ice cream made from coconut milk the other day, I thought it would be good, my coworker didn't. Neither one of us remembered to buy some to try though.

  5. Artichokes and Coconut Bliss? Two of my favorite foods! Like you, my favorite flavor is Cherry Amaretto. I didn't think anything could beat the simplicity of their vanilla, but the Cherry Amaretto knocked my socks off. The thing that I love most about Coconut Bliss is that their ice creams only have about five ingredients. Got to love that!

  10. That artichoke looks so cool.

    My fav vegan ice cream is any of the coconut ones from so delicious (I've never tried coconut bliss) or a non-dairy sorbet... I have mango raspberry in my fridge right now.

  11. At the moment, I'm blissing out on a lovely bowl of pistachio nuts and will be having a piece (or more) of a Theo Nutcracker Toffee bar for dessert. Thanks for the artichoke recipe as now I just have to track down some fresh artichokes to try this yummy recipe :-)

  13. I didn't have artichokes until I was an adult, but I love them! I have yet to prepare them fresh, but your stuffed artichoke is inspiring!
